German Pancakes

I don't know if they are actually "German" but that's what the original recipe called them - and when you order a "German pancake" in NJ you get something like this.

Gene's "German" pancakes.
Preheat oven to 425F. Add two ovenproof 9 inch skillets or
a 12 inch and a smaller one. (I have a 12 and 6).

Sift together:
1 cup flour
1 tablespoon sugar
1/4 teaspoon salt

Beat
4 Eggs
Add
1 cup milk and beat again.

Add the wet to the dry and mix just until combined.
Not too much as it will become tough.

When the oven is up to temperature and the pans hot
remove from oven and add 2 tablespoons butter to each.
Swirl to melt it and coat the pans then add the batter to each.
Immediately return pans to oven and bake for about 20 minutes -
until golden.
When you remove them they will deflate so don't worry.

You can top however you like. Most often I sprinkle with lemon juice
followed by a dusting of powdered sugar. A berry compote is good too.

Optional: if you do use the lemon juice you can zest the peel and put that
into the batter.

Berry compote
2 cups berries fresh or frozen. whatever kind you like.
blueberry, raspberry, blackberry,strawberry etc.
1.5 cups sugar
Simmer berries until they bubble then for about 10 minutes.
Let cool a bit then add 2 teaspoons lemon juice.
Optional: strain to remove seeds. (I don't).
